Hunting and utility knives are certainly some of the most useful and used knives I make.  They are smaller, more portable and more practical to carry.  They see use in everything from opening boxes to opening envelopes, from cleaning fingernails to cleaning big game.  Because they used so often, it can be the most difficult type of knife to make, because any flaw in design or workmanship is readily apparent.
