Santoku

The Santoku style kitchen knife has become my personal favorite for an everyday knife.  The Japanese word "san" means "three", indicating the three purposes of a good Santoku knife.  It has a fine point for piercing, it has a long enough blade for slicing, and the combination of a slight arc to the front half of the blade and a straight edge along the back half make it the perfect knife for chopping.  The offset handle ensure that your fingers stay clear of the surface of the cutting board when cutting.  

This blade is forged from 52100 with a springy spine and a hard edge.  The blade is just under 1/8" thick at the spine, but with a straight flat grind, the blade is light and the edge is very thin.  The cutting edge is 6.25", which I have found to be a perfect length for most any kitchen task.  

The handle is a beautiful piece of stabilized spalted maple, with three satin stainless bolts.  Though it is hard to see in the photo, the wood is a burled combination of dark browns and amber tones.  Even thought the handle is polished, the faceted shape keeps the knife secure and comfortable, even when wet.
